Local farms delivering to the AASH Station are located at high elevations, often 1,900 meters above sea level or higher. These altitudes, combined with ideal growing conditions, generational farming expertise, and quality-focused processing, produce an exquisite Natural with the fruit and floral complexity so iconic to Ethiopian coffees.

In 2019, Testi Specialty Coffee acquired the AASH PLC washing station and began working closely with the community to elevate quality even further. Today, the station serves about 750 local smallholders, whose farms are planted with a mix of JARC varieties and local landraces—genetically diverse, hyper-local cultivars perfectly suited to the West Arsi region’s unique microclimate.

This lot is named after the nearby town of Mundayo.

Traditional Farming, Modern Quality

Farmers in West Arsi have cultivated coffee for generations, using traditional intercropping methods to grow coffee alongside food crops. This not only maximizes land use, but also supports household food security. Most farms are organic by default, with minimal use of fertilizers or pesticides. Manual labor is the norm—everything from cherry picking to processing is done by hand, preserving traditional knowledge and attention to detail.

Processing at AASH Station

Once ripe red cherry is selectively handpicked, it’s delivered to the AASH station, where it undergoes visual hand sorting to remove defects. Cherry is then laid to dry on raised beds, with frequent raking to ensure even drying over 20–25 days.

While Ethiopia is celebrated as the birthplace of Arabica coffee, it remains a leader in the specialty coffee world due to its unmatched flavor diversity, a result of:
